“I had to get over that 1950′s perception of each meal having servings from each of the four food groups before I could tailor my menus to the Diet of Light plan,” says Evelyn, a high-school teacher and the mother of two pre-teen boys. “The first time I prepared chicken with steamed vegetables for dinner and I didn’t put mashed potatoes, a biscuit or rice on the plate, my husband and sons had a little temper tantrum.
